As a person who's not overly phased about StarCraft, but generally buys the *really* big name games, should I bother with SC2?

Competition, every store wants a slice of the Starcraft 2 Pie so they charge as little as possible for it.

also expansions.. this title is bound to have legs - 2-3 expansions + map packs etc etc

They're not doing expansions though, they're releasing three separate games remember.
