Saltimbocca ( italian for jumps in the mouth ) is sage wrapped in pork (or veal, or chicken ) wrapped in proscuitto. Cooked in wine and some basic seasoning it's super easy and super tasty. Make sure you use the wine as a sauce otherwise it can be a bit dry. I cooked a large mushroom and some pearl onions and baby carrots in the the wine as well, lending both flavour to the sauce and some garnish ( not that mushroom is a particularly attractive garnish ).

For those of you who don't know, baby carrots aren't really baby carrots. I was surprised at how many people didn't know that when the topic came up at work the other day. I suppose it's an easy mistake to make ... Baby carrots are not young carrots, but rather small pieces of carrots that are chopped and whittled down to look like small carrots.
