Thought I'd cook and post up this recipe after reading Exo's post. I just wanted to show that for not much extra money and a little bit of extra time you can do a lot more with your food. I don't want to diss Exo's recipe as I've made many very similar quick and easy chilli's to his.

Cost me $26 in ingredients, The only thing I didn't get was the spices which I already had. If you buy those as well then you'll get yourself a fuel voucher. Will feed 4 people, more if you have a salad or rice etc on the side.

Feel free to use whole spices, toast them first and then grind them. You'll end up with a slightly better chilli if you do that.

Kangaroo Chilli Con Carne

  • 1 can kidney beans

  • 3 tbsp Olive oil

  • 2 onions

  • 2 garlic cloves

  • 4 fresh Jalepeno chillis

  • 100g mushies

  • 800g kangaroo steak cubed

  • 2 tsp ground cumin

  • 1/2 tsp ground cinnamon

  • 1 tsp Molasses ( sugar or honey will be fine )

  • 2 bay leaves

  • 2 cans chopped tomatoes

  • 200ml beef stock

  • 1 red capsicum diced

  • the leaves from a bunch of coriander

  • 25g dark chocolate (something like the lindt 85%)

  • 1 medium firm, ripe avocado

  • 1/2 red onion chopped

  • 250g sour cream



Heat half oil in pan, add onion, cook till translucent. Add garlic chillies, mushies, cook for another 5 mins. Transfer to a plate. Add remainder of the oil to the pan, when hot, brown roo in two batches.

Return onion to pan with the roo and add cumin, cinnamon, sugar bay leaves, tomatoes, stockand beans. Stir and bring to simmer and add the capsicum. Transfer to an oven preheated at 150 C for 2 to 3 hours ( or simmer in the pot for as little as 1 hour ). I threw it in my smoker with a few hunks of hickory for the extra flavour.

Stir in most of the coriander and all the chocolate, season with salt and extra chilli if you like it hot.

Chop avocado and mix with red onion and remaining coriander. Top the dish with a spoon of sour cream and a spoon of the avocado mixture. Eat...

Can you do anything with Duck Stinky. Such a good game meat.

its fine, just a bit dry. and pretty strong taste wise.

i've been told the best results are from a good marinade. never tried it though.

Every time I've tried the stuff it's tasted like a handful of dirt. If that's the strong taste you mean, then will definitely pass :)

yup, kangaroo has to be cooked very quickly or very slowly, anywhere in between and you end up with arse.

Kangaroo meat is great, and it's not dry if you cook it slower. It's great just as a steak, lightly seasoned with salt and pepper and with a little fresh rosemary. Awesome stuff.

Only when cooked incorrectly.

It has mega low fat content, so either soak it in a marinade and cook fast. Or seal and slow cook.
Taste is strong and distinct.

The only major negative is the smell when cooking reminds me of dog food.

Organic/health food shops often sell molasses. Otherwise, substitute sugar like he said (dark brown sugar would be best for this).

Never tried the meat though :(

Yeah, I'm pretty keen on roo. Plus it's cheap and high in iron. I season with S&P. quickly sear both sides on ultra-high flame, then turn to very very low and cook the inside slowly.

Yeah, they're much better for the environment. I think it'd be a fantastic idea to farm kangaroo. Their meat is so much healthier too.

Yeah fair point, must be hard to farm Kangaroos though, surely you'd need massive fences?

Kangaroo rocks, funnily enough I just had this as leftovers for lunch.

Its a lot more gamey than normal meat, but the kangaroo steaks also rock on the barbie. You gotta get the fat ones so you can have them nice and bloody and not dried out.

When I do roast kangaroo I do it with a chocolate and berry jus.

Chocolate goes really well in Chilli con corne, just a small amount is all you need. In fact a lot of mexican dishes get a bunch of awesome from a chunk of dark chocolate.

A bit of chocolate also does really well in spag bog.
