Don't bother with the banana leaves, doesn't really affect the taste, cover it with foil instead.
Annato paste can be bought from Pennisi foods @ 17 balaclava st 'gabba. they have a reasonable selection of mexican stuff including chipotle in adobo, and other yummy treats. here's my attempt using a friend's recipe :- A very tasty mexican dish of shredded pork. This dish was featured in 'Once Upon a Time in Mexico' where Johnny Depp's character would order it at every restaurant he ate, if it tasted too good, he would kill the chef. Made it last night, turned out quite well though I don't have pics on me - I will upload some later.
Ended up having to use Pork leg rather than shoulder, so it was alot drier than it should have been and didn't shred quite so well. Can definitely see how it would be awesomely tender with the right cut of meat. My fruit guy forgot my banana leaves so I ended up using alfoil too :( |

is there anything you can substitute for the annatto seeds? I've read about using paprika + tumeric as a replacment... not sure who well that'd work.
I'll probably end up cooking this for people who'd probably break out in hives or some s*** due to the annatto seed. and they'll break out... then swell up... then die... in my place... which is not good at all. |

I haven't seen anything about substitutions but I really don't think it would be hard.
BTW make sure your coffee grinder works (mines f***ed) cos mortar and pestling that s*** is not cool |

Dunno maybe it was too good Edit: Turns out I was close - From Wikipedia for Cochinita pibil In the movie Once Upon a Time in Mexico, puerco pibil is a favorite dish of the main character, Agent Sands, and the character's obsession with the dish is the feature of several scenes. He feels so strongly about the food that he murders any cook who makes it too well (in order to "maintain balance" in the country). A recipe for puerco pibil appears as a bonus feature on the DVD edition of the film.
