so there is finally a break in the weather expected so i'm planning on going for a bike ride with the missus and then having a picnic in the dutch countryside

but i wondering if anyone has any ideas for something interesting to take.

so far i'm thinking fruits with some cheese and maybe some cold meats and dip with sparkling water and maybe a wine

but was thinking about cooking or making something and taking that.. which is what i'm after with ideas.. need something that wont spoil easily and can be carried on a bike (so nothing too runny like soups)

any ideas?

Ham, Cheese, Tomato and Onion Quiche

(or Picnic Pie if you dont like Quiche!!)

1 sheet Puff Pastry
4 - 6 eggs
Chopped Ham
Grated Cheese
Chopped Tomato
Diced Onion (optional in case you dont want onion breath)
dash of Milk
Salt and Pepper
Chopped Parsley (small amount for garnishing)

1. Grease baking dish and line with Puff Pastry. Poke pastry with a fork to aerate. Bake at 200 degrees until "puffed" and golden brown. Remove from Oven and allow to cool. (yes it will deflate but its supposed to). DO NOT remove pastry from the dish.

2. While Pastry is "puffing" in the oven, beat the eggs and add a dash of milk and salt and pepper to taste.

3. Pour Egg mixture onto the pastry and then sprinkle in the chopped ham, tomato, onion and finally the grated cheese. Return to oven for approx 20 minutes or until egg looks set.

4. Remove from oven. Allow to cool and cut into squares and place in a tupperware container. Refrigerate until going on your picnic and then place a frozen brick (as in one of those blue things to keep food cold) in the bottom of your basket .

Enjoy!!!!!

Any sort of nice salad would go down well... a nice cold pasta/potato salad type thing.

Also salami ftw! You can't have a picnic without salami.
