So I've deleted a bunch of mp3's on my hard disk, how do I get itunes to go through and delete the deleted mp3's from it's list/playlist of songs??

You don't. It's one of itunes' failings. You have to get into the mindset that all management of your music must be done inside itunes. So in the future, delete them from your itunes library and select the option to also move the files to the recycle bin.
Yes, it's annoying, but that's the way it is. |

Given that I do go through iTunes when managing my actual MP3 files, I don't have this problem but the lack of "Find my missing files" functionality is quite lame as my dad has had songs go missing (during formats etc etc), and iTunes provides no way to find them other than "select each song and see if it shows a (!)".

If you know which files you have deleted, you could just delete them out of the itunes db, which is just an xml file
I used this method when moving my music folder from one drive to another. There's a guide on one of the non-apple sites that explains what you need to do, but basically you close itunes, edit the itunes db xml file, remove some other file, start up itunes and tell it to rebuild your db |

If you know the files, then just delete them from iTunes, not the database XML. iTunes won't prompt for anything if the files don't exist, it'll just remove the entries.

Haha! I didn't realise that iTunes didn't handle this problem properly, like ... well every other file-based program on the planet.
How silly. |

iTunes will show an exclamation mark next to tracks which it cannot find. just delete those listings then.
