I dont think anyone actually needs more than a kilo of beef jerky ..

that said, its apparently very easy to make

you could try a local south african shop for 'Biltong'. My girlfriend's family gets a pile of it occasionally.

Don't quote me on this but isn't beef jerky jsut dried beef.

Basically marinate the meet and then sprinkle it with salt.

Then hang it in a "dry" box for up to 7 days?

The salt is the thing that dries out the meat in conjuncion with the warm air from the bulb?

Make your own dry box with a 40w light bulb, card board box, alfoil and psu fan.

the best beef jerky I have ever eaten was bought from the butcher in Tiaro. $23 a kilo I think, and the stuff is better than any store bought or home made jerky I have ever tried. The meat is also the best meat you can buy from there. It is well worth the 2 an a bit hour drive.

Speaking of meat if you like your meat organic I suggest you try the Organic Butcher on Old Cleveland Rd Coorparoo (across from where Coorparoo megamart used to be).
I went there for the first time the other day and although it is pricey fro some items (organic bacon at $30-something dollars a kilo) it is quite ok for other stuff - I bought 4 rib fillet steaks for 20 bucks or thereabouts.

Got talking to the guy and he told me they have been there for 28 years or so. Good on em for finding a niche market when so many butchers fall by the wayside due to big chains like Coles and Woolies undercutting their prices.

I also go to Coco's at Annerley when possible not only because they have a good selection but their service is stacks better than the deads*** 15 y.o.'s at the deli at Coles etc.

Can't beat your local butcher.

Whoa, that's pretty cheap. The few times I made jerky it turned out to be a fairly expensive process (from a per kilo perspective) seeing as the 4 KG or so of meat you buy disappears down to like 800 grams.

Homemade jerky is the best though... My favourite recipe was to put a whole pile of white and black pepper, salt, and a big swatch of hot chilli sauce into a container with the meat, and leave it marinating overnight. Then you slow cook it in the oven for most of the next day. When you've finished drying it out, the sauce will have all evaporated away leaving a layer of spicy sugar and pepper on each piece with the chewy beef on the inside.

The stuff I made had to be eaten within a week or so though, unless you wanted to freeze it or vacuum seal it. Otherwise molds and things started eating the spicy sugar substance on the outside :)

^hey maybe I'm wrong. Could very possibly be wrong. We buy a lot of meat through them. We usually buy half a cow and then freeze it. Cheapest way to get good quality meat.

hey there's a guy at indooroopilly shops who has a jerky stand near woolies on the ground floor iirc.

Seems to have a wide selection and has tasters for u to try. Never seen anyone within a 5m radius of his stand tho, go help him out. It is like jim's jerky or something

of course you can post meat. chryovac (spelling) we have transported heaps of that sort of thing. seafood, vac-pac steaks etc.
